Cooking with Characters: Deputy Gabby Grimm's Must-Have Cookie Recipe

One of the things I love to do is have my characters cook. Oh, I'm not talking about fancy gourmet  cooking that takes hours in the kitchen. Frankly, that's not my style. My characters are busy people, holding down jobs and juggling their "to do" lists. But that doesn't stop them from wanting to eat tasty food.

Deputy Gabby Grimm's wildest adventure, one that tests her skills as a law enforcement agent in Vermont, involves a missing teenager, the daughter of Sheriff Rufus Parteger, who dropped off a recipe to the deputy just before disappearing. The hitch? Mary Ellen told Gabby her mother left off one important ingredient for the Chocomel Beast cookies.

Since Sam Hogan, Gabby's hunky Special Forces boyfriend loves those cookies, she's more than willing to solve the case to find out just what's missing from Ellie Parteger's recipe.

Little Red Riding Hood and the Secret Cookie Recipe

Ellie Parteger’s Chocomel Beasts
2 ¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) softened butter
¾ cup firmly packed brown sugar
¾ cup sugar
1 teaspoon vanilla extract
2 eggs
12 ounces semi-sweet chocolate chips
15 caramel squares, chopped up into about 8 pieces each
1 cup chopped pecans
1 cup shredded coconut
1 * HHOL (This is the secret ingredient!)

Preheat oven to 375°F. Bake for 10 to 11 minutes.

In small bowl, combine dry ingredients -- flour, baking soda and salt; set aside. In large mixer bowl, combine butter, brown sugar, sugar, and vanilla extract; beat until creamy. Beat in eggs. Gradually add flour mixture. Stir in semi sweet chocolate chips, chopped caramel pieces, pecans, coconut, and *HHOL. Drop by rounded scoops (about a tablespoon’s worth) onto ungreased cookie sheets.
